Sweet Ginger Chicken
- 8 Chicken Drumsticks
- Flour
- 2 Eggs
- Cornflakes
- 50g Fresh Ginger
- 250g Ketchup
- 4-6 tbsp Honey
- Salt
- Crushed Black Pepper Corns
- 1/2 tsp Chilli Flakes
- 1 tsp Coriander Powder
- Oil
- Optional: Spring Onion
- In one plate, add some flour. In another plate, beat the eggs with salt and black pepper. In a separate plate, crush an appropriate quantity of cornflakes into small pieces with your hands.
- Optional: Steam and cool the chicken beforehand in a steamer until cooked through.
- Coat each drumstick in the batter. First coat with flour, then egg, and finally the cornflakes.
- Place into the air fryer and brush the top with a small amount of oil.
- Air fry for a total of 15–20 minutes, depending on the thickness of the drumsticks and your air fryer. Halfway through the cooking time, flip the drumsticks over and brush with oil, as with the other side.
- While the chicken is cooking, prepare the coating.
- Add the chopped ginger to a pan with some oil and sauté for 2 minutes. Then add the ketchup, honey, chilli flakes, coriander powder, black pepper, and salt to taste.
- Sauté the sauce for another 2–3 minutes.
- Once the chicken is ready, gently coat each drumstick with the sauce. It should absorb the sauce well while staying crispy.
- Garnish with freshly chopped spring onion.
- Enjoy.
